Our production process begins with cleaning the nuts by floating them in water, enabling us to pick out the ones that fall short of our quality standards.
We then sterilize the chestnuts in hot water and give them a blast of cold to bring them back to room temperature. We do this by leveraging a proprietary-designed system that cuts the time the nuts need to withstand high temperatures to a minimum.
We then brush and calibrate the nuts into units of a kilogram and store them at a controlled temperature and humidity.
